I have no idea where the past two months have gone. I am always vaguely aware that the older we get, the smaller a proportion of our life a month becomes. When we were five years old, a year felt infinite. But now, I’ve already made plans that lie six months ahead, and that time seems hardly a blip in the scheme of things. The years have become busy and blurred, and I often seem to find myself looking forward to a point several days or weeks or even months ahead. I’m trying vigilantly to stop this pattern, because it becomes too easy to wish life away trying to attain the next goal, experience the next milestone and arrive at the start of the next adventure. Life is now, and now is fantastic.
The banana muffin just upped its sass factor. I’ve taken a childhood favourite banana muffin recipe from my legendary Aunty B and thrown in a few of my favourite things; success! These muffins are made with vegetable oil and wholemeal flour, and each warm bite is fluffy, moist and full of juicy blueberries. Topped with a generous dollop of lime cream cheese frosting and crunchy coconut flakes, these babies promise comfort, scrumptiousness and a little zing. And they are super easy to bake, the muffin recipe is one-bowl and there ain’t no funny business. Just pure and sweet cakey goodness.
Welcome to my 50th post! I could almost write a blog entirely dedicated to sharing cheesecake recipes with a world of hungry, curious lovers of crunchy bases, smooth and creamy fillings, and pretty toppings… And I believe the world would become a slightly better place for it. But for now, let us see what magic this new recipe can weave in your life! I present to you something a little out of the usual for a One Perfect Mess dessert, and I urge you to not reflexly screw up your nose and file this post as reeking with words like ‘wellness’ and ‘clean eating’ and all those enticing but slightly cringe-worthy faddish phrases that are thrown in your face every time you guzzle a big fat chocolate bar. Because there is nothing wrong with that chocolate bar. But believe me, there is everything right with this cheesecake. Also I sort of lied, because there’s actually no cheese in this cheesecake. Ok I know you’re probably thinking this looks bad, but just keep reading. It gets better. I promise.
Here is a slab of joy that I’m smitten to share with you; I’ve re-incarnated Cadbury’s gift to the world in slice form, and it is destined to unite cherry ripe lovers and convert cherry ripe haters. Is there such a thing as a cherry ripe hater? What a sad soul. Let’s not dwell on such pitiful things, back to this swanky ol’ Cherry, Chocolate and Coconut slice! A crunchy chocolate biscuit base sets the stage, and is a worthy foundation for the soft, sweet, chewy coconut and cherry filling, bursting with juicy chunks of cherry. Atop all that lies a silky layer of chocolate and coconut ganache, that catches clouds of coconut flakes.
I’m back! After a few weeks of resting the old broken arm, I am now mobile and full of energy and ready for some serious baking. I thought I’d crash back onto the blogging scene with something fancy, so I present to you this monstrously imposing and ridiculously delicious absurdity of a creation; 2 layers of rich, fluffy chocolate cake sandwiched together with slatherings of peanut swiss meringue buttercream, filled with raspberries, shredded coconut and mini marshmallows. I couldn’t help but drizzle the whole thing in dark chocolate ganache prior to piling rocky road and crunchy peanuts on top… Whoops.
By popular demand, I present to you another healthy recipe! These little cookies have big personality; packed with almonds, sunflower seeds, coconut, oats, wholemeal flour, dates and a little honey for sweetness, each bite crumbles in your mouth and is irresistibly moreish. Because they lack any refined sugar, the texture of the cookies is on the slightly cakey side, but they still have a lovely crunch. Perfect for a morning snack, kids’ lunchboxes, or an after dinner treat.
Public service announcement; I have made a dessert that is purely, honestly, authentically healthy! I had my first ‘bliss ball’ last week after my last exam, and it was an awe-inspiring, eye-opening, life-altering experience. Ok perhaps that’s a slight overstatement, but it was pretty darn delicious! And as much as I love baking with butter and sugar and cream etc., in reality we can’t all stuff ourselves with cake everyday of the week (tragic, I know). But, the beautiful thing about these little treats is that although they are vegan, gluten free, refined sugar free and 100 % natural, they are entirely decadent and addictive. Packed with almonds, dates, coconut, seeds, cacao and some protein powder, just a single ball of bliss is satisfying and delicious enough to boost you through a slow afternoon, or accompany a cup of tea before bed.

As your knife glides through this elegant monster, guests will ooh and aah as you reveal what’s inside… An incredibly soft, moist layer of coconut cake nestled between lashings of velvety chocolate cream cheese frosting, kept safe in the rich embrace of 2 fudgy chocolate cakes. Cover the whole thing in more chocolate cream cheese frosting and crispy coconut flakes, and you’re in foodie heaven. It’s the love child of a classic chocolate cake and a Bounty bar, and it’s all yours if you’re up for a couple of hours of baking bliss!
This is a swanky caramel slice that puts the classic recipe to shame. First, you taste the slathering of dark chocolate, sprinkled with sparkling salt flakes. Then, your teeth collapse into an irresistible layer of thick, silky, slightly salted caramel. Finally, that magnificent mouthful is finished off with a moreish, crunchy base of roasted nuts and shredded coconut.
